Chocolate Dipped Hokey Pokey

Ingredients:
- 10 tbsp brown sugar
- 4 tbsp golden syrup
- 2 tsp baking soda
- 150g dark chocolate
Directions:
- Grease or line a baking tray.
- Combine the sugar and golden syrup in a saucepan and over a medium heat bring it to the boil, stirring constantly.
- Boil for 2 minutes, again stirring constantly.
- Stir in the baking soda, whipping the mixture up quickly.
- Spread the mixture onto the greased baking tray.
- Leave to harden and as soon as the mixture has cooled break it into pieces and place it in an airtight container.
- Melt the chocolate over a bain marie until smooth.
- Dip each piece of Hokey Pokey into the chocolate and place on a sheet of baking paper until the chocolate has set.
